Koi Seared Tuna Ingredients: 200g tuna steak 1/3 cup (60ml) sesame seeds 100g fresh vegetables of your choice - butternut, mixed peppers and courgettes 20ml olive oil 2 Tbsp (30ml) mixed herbs - oreganum, thyme 2 tsp (10ml) wasabi powder 1 cup (250ml) mayonnaise 2 Tbs (30ml) sweet chilli sauce 1 sweet potato, cut into matchsticks / julienne Oil for deep frying Method: Preheat the oven to 180°C Heat a pot half full with oil Coat the tuna steak in sesame seeds Place vegetables in an ovenproof dish and drizzle with olive oil and mixed herbs Bake for 20 minutes until soft but still crispy While vegetables are in the oven, stir together wasabi powder and mayo. Add some mixed herbs as well as sweet chilli sauce Fry the sweet potato matchsticks until crispy and golden in colour. Drain on paper towel Sear the tuna in a heated pan and cook on each side for approximately 3 minutes or cook for longer depending on how you like your tuna To serve: Place grilled Vegetables in centre of plate, place tuna on top of veggies and dress with wasabi mayo. Sprinkle over sweet potato crisps |
