Yamato Salad

Serves 4

Ingredients:
2 Tbsp (30ml) Wakame (dried seaweed)
Half a head broccoli, cut into florets
50g Harusame (dried glass noodles)
20-40g mixed lettuce
120g cabbage, shredded
120g carrot, shredded
1 or 2 tomatoes, sliced as you like

For the dressing:
¼ cup (60ml) soya sauce
¼ cup (60ml) rice wine or white wine vinegar
1 Tbsp (15ml) sugar
1 Tbsp (15ml) white sesame seeds
½ cup (125ml) grape seed oil or sunflower oil
¼ onion, chopped
1 garlic clove, crushed

Method:
To make the dressing, place all the ingredients in a food processor and blend or whisk together if you don’t have a blender.

Soak wakame in cold water for 5 to 7 minutes and then drain.
Blanch broccoli florets in boiling water for a minute, refresh in ice cold water and drain.
Cook noodles according to packet instructions.

To serve:
Place lettuce and cabbage on a plate
Top with carrot, tomato, noodles, broccoli and top with Wakame.
Drizzle over dressing.
